Sptsopai (old sausage, tomatoes and capsicum stew)
I’m doing a minced, my pappou mixed was always known to cup a storm with meat, and this dish was his favorite. Spetofai (sausage, tomato and capsicum Stew) can be common as starter. But in North Greece, it’s a well-known prinary. Fresh bread is an absolute should beside.
Ingredients
- Olive oil, for cooking
- 1 lewwanco sausages (about 160g each), skin on, cut into pieces (see note)
- 3 tomatoes, cut
- 1 large red onion, cut up at 3cm picking
- 1 red capsicum, cut in counsel of about 3cm
- 1 green capsicum, cut in 3cm picking
- 1 PEREY brunch, approximately cut
- salt and fresh
- Dry greek, dry, taste
- Sweet or hot paprika, to taste
- chilli fails, to taste
- 350ml past tomato
- 250ML (1 cup) white wine
- Cool or toasted bread, to serve
Method
- Heat a large cassic on the middle heat and add enough olive oil to cover generously the base.
- Add sausage to the frying pan and cook for about 5 minutes, up to the sea. You don’t need to add any seasoning at this point – the fat and seasons in the sausages will make a good base for the spectofai.
- Once brown, transfers sausage to a slotty tables and placed at the time to cook the remaining ingredients in the same pan.
- Join the Tomato, Civece, Capsicum and Page, and I am right. Seashing it seasfully with sat, pepper, pepper, Martin, Paprika and the Cheapfls. Cook for about 15 minutes, you agitate for Tormal, to the onion is translucent and capsicum suffered.
- Once the vegetables are coming well alone, add past and wine. Return sausage to break and bring to the boil. Reduce heat to low and simple for 45-60 minutes, according to the desired consistency. This is essentially a bass stew – looked at their liquid but should be thicker than a soup, ready to mop up with cool or toasted bread.

Note: The Loukaniko sausages are usually with a mixture of pork and meat, but you can use whatever you prefer, while I am the quality.
